1. The only thing that resists me from recommending Canon R7 camera to you is its price range
You are paying for features that you would never utilize as a wedding photographer. For example, 15 FPS or 30 FPS continuous shooting speed with animal eye or Bird eye AF will get never utilized.

Sorry to say that, but no photographer will use the R7. The R7 is NOT a top of the line APS-C camera. No seetings Display, poor Body Quality, only the stupid and lame SD Card Slot and the Usability is far away from that we have expected.
As a wedding photographer I 100% agree with you on this. We do have very good alternatives to the Canon R7 camera.
Nikon Z5 is a prime example of this.
Canon should update the Canon EOS R camera asap.
I have done weddings with Canon 80D, and Canon 7D Mark II as well as right now I own Canon R6.
As a Canon user, I love to be with Canon all the time. But, at the same time Canon should also bring some affordable full-frame solutions like Nikon and Sony @ $1500 body price.
